If I use dgraph cloud with GCP, will the lambda functions be google cloud functions? or what?

If I use GCP as my hoster in dgraph cloud

are the lambda functions now GCP Cloud Functions, or AWS lambda functions?

lambda functions in this context are the javascript you can run from dgraph backed by the dgraph lambda server specifically. Nothing to do with any cloud provider. The name is from lambda calculus, not amazon’s product called lambda functions.
